Best Chocolate Cake Ever! No really, I mean it!


Hands down, the BEST chocolate cake ever!

So, for family lunch on Sunday I wanted to make a delicious dessert that was, of course, easy, with not too many complicated ingredients, because I will avoid going to the Stupidmarket at all costs. I adapted the recipe from The Still Room as I didn't have enough plain flour or brown sugar and  I didn't have unsalted butter. I also didn't do the ganache, which would be totally amazing for a very special occasion, I opted for sifted icing sugar and served it with whipped cream. Oh my, it is totally delicious.

Ingredients

Cake

175 grams pitted dates
300 mls boiling water
100 grams peanut butter
125 grams butter
150 grams brown sugar
75 grams white sugar 
75 grams cocoa
3 eggs
3 teaspoons vanilla
80 grams plain flour
70 grams SR flour
50 grams Wholemeal SR flour
1/4  teaspoon baking powder
1 teaspoon bicarb soda

Peanut Butter Ganache

200 grams double cream
75 grams brown sugar
225 grams dark chocolate (70 %)
2 teaspoons dark rum or milk

Method

Grease and line two deep, round 18 cms cake tins
Preheat oven to 180 C
Put pitted dates in a bowl, pour over boiling water and leave for 5 - 10 mins
In the bowl of a food processor put the peanut butter and butter then puree till smooth
Add slightly cooled date and water mixture
Process till smooth
Add sugars and cocoa, again process till smooth
Add eggs and vanilla and, you guessed it, process till smooth
Finally add flours, bicarb soda and baking powder and gently combine
Divide mixture evenly between baking tins and bake for about 30 - 35 minutes

For the Ganache

Boil cream, stir in sugar then pour this cream mixture over chocolate in a bowl.
Add peanut butter and rum/milk and stir  slowly until the chocolate has dissolved. 
Leave Ganache to cool and thicken up

Spread and assemble cakes while the Ganache is thick and smooth

Put Butter and Peanut Butter in Thermomix Bowl

Blitz till smooth
Add date mixture, sugar and cocoa and blitz till smooth
Add eggs and blitz till smooth

Add flours and baking soda and bicarb and gently combine
