I love Hummus, there are so many variations but I keep it simple and authentic with the addition of caramelised garlic. It is so worth getting into the habit of making some caramelised garlic to always have on hand. For this recipe I used 1/2 a full bulb of Caramelised Garlic. It truly makes this hummus super delicious.
You can double or even triple this recipe, I use 100 grams of dried chickpeas, which, once soaked and cooked is equal to 1 x 400 gram can of chickpeas.
|Ingredients for Caramelised Garlic Hummus|
|Zest half a lemon|
|Juice half a lemon|
|Add all ingredients to bowl|
|Blitz until super smooth|
|Dust with 1/2 teaspoon of ground Cumin, using a fine sieve|
|Serve with vegetable sticks or these nut and seed crackers|
100 grams dried chickpeas, soaked over night and boiled for 1 to 2 hours, then cooled or 1 x 400 gram can of chickpeas rinsed and drained
1/2 a bulb of Caramelised Garlic, squeezed out of the papery skins, here is how to do it
2 tablespoons Tahini
2 tablespoons Rice Bran oil (it's the oil I use for everything)
2 tablespoons water
1/2 teaspoon salt
1/2 teaspoon ground cumin for sprinkling over the top
To the bowl of a food processor at all ingredients and blitz until super smooth
Scrape into a shallow serving dish and dust with ground Cumin
