Almond, Cinnamon and Walnut Cake

Hello Dear Reader,

Once a month, at work, we have a morning tea celebrating new staff, retirements and birthdays ect, everyone brings something delicious and we all look forward to this event. In my case, I look forward to each and every meal and start thinking about my next meal as soon as I am finished the meal I am eating! Obsessed much?

 I love looking at recipes, of all sorts, in any magazines, recipe books or where ever they turn up, I also collect them from friends and work colleagues. Over the years I have tried to catalogue them so I know where to put my hand on them. I have a huge folder and 3 smaller ones, that are divided into sections, that seem do the trick. I am constantly trying new ones and especially love any excuse to use my Thermomix. I have adapted this one from here. It is so easy, deliciously moist and morish, you just have to try it.

Ingredients for Almond, Cinnamon and Walnut Cake
Grease the sides and base and also line the base of a 23 cm Springform tin. 

Grind 125 grams of Almonds for 10 seconds on speed 8, set aside

Then grind the Walnuts, Sugar and Cinnamon for 10 seconds on speed 6 and set aside (sorry forgot to take a photo)
Put the Butterfly attachment in the Thermomix and add 160 grams softened butter and 
200 grams sugar, beat for 2 minutes on speed 3
Remove Butterfly attachment, replace lid,  remove MC, now on speed 3, add the eggs, one at a time through the open hole in the lid. 

Scrape down sides
 Add vanilla, almond meal, flour, bicarb and cream and blitz for 20 seconds on speed 6
Swirled and smooth cake mix
Place half the cake mix in the prepared cake tin and smooth the top
Add half of the Walnut, Cinnamon and Sugar mix
Spoon remaining cake mix over Walnut layer and then follow with remaining Walnut mixture 
Ready for the oven
While cake is baking, juice half an orange and add 1 1/2 tablespoons of sugar to a bowl and mix to dissolve sugar
Once cake is cooked, let it cool for 10 minutes, remove collar from the cake tin and drizzle over the sweet orange juice

Beautifully moist and nutty
This cake is so moorish

Ingredients

125 grams almonds


150 grams walnuts

1 teaspoon cinnamon

2 tablespoons sugar


160 grams butter, softened

200 grams sugar

2 eggs

160 grams SR flour

1/2 teaspoon Bi-carb soda

200 mls thickened cream

1 teaspoon vanilla bean paste

Juice of 1/2 an orange + 1 1/2 tablespoons of sugar (to drizzle on cooked cake)

Method

Preheat oven to 160 C to 180 C, depending how "hot" your oven is. Grease the sides and base and also line the bottom of a 23 cm springform tin

Firstly grind the almonds for 10 seconds on speed 8 and set aside

Then grind the walnuts, sugar and cinnamon for 10 seconds on speed 6 and set aside

Place the butter and sugar into the Thermomix with the butterfly and beat for 2 minutes on speed 3 until thick and creamy.

Remove the butterfly, replace lid and while beating on speed 3, add the eggs one at a time through the hole in the lid.

Scrape down the sides and add the vanilla, almonds, flour, bicarb and cream and beat for 20 seconds on speed 6.

Place half of this mixture into prepared springform tin, then sprinkle over half of the Walnut, Cinnamon and Sugar mixture. Spoon over the rest of the cake mix, and top with the remaining Walnut, Cinnamon and Sugar mixture.

Bake at 160 C/180C  for about 45 minutes to 1 hour. Let cool for 10 minutes, remove the collar from the cake tin, and drizzle over the sweet orange juice

A super delicious and super easy cake that will impress!
