Divine Chocolate and Peanut Butter Brownies

Hello Dear Reader,

There are some things in life that just go together, like fish and chips, coriander and lime, vegemite and avocado AND Peanut butter and chocolate. I found this sublime recipe on Mels Kitchen Cafe and knew I had to make it. It is my little Grand Niece's third birthday today and thought I would make it as her Birthday Cake. They are coming over for dinner tonight and I will update the photos when we actually serve it, but until then enjoy the following photos and recipe. I have adapted the recipe a little with less sugar and chocolate, than Mels original and I have used Cacao instead of Cocoa powder.

Ingredients for Chocolate and Peanut Butter Brownies
250 gram chocolate broken into pieces, 250 grams peanut butter, 265 grams plain flour, 40 grams Cacao, 325 grams white sugar, 1/4 teaspoon salt, 1 teaspoon vanilla paste,
3/4 teaspoon baking powder, 4 eggs and 170 grams softened butter

Grease and line a 22 cm x 32 cm baking tin and preheat the oven to 180 C
In the bowl of a stand mixer add butter and peanut butter.
And mix until light and fluffy
Add Sugar

And mix for 2 minutes
Add the 4 eggs
Again, mix very well
Add Cacao and gently mix through until incorporated
Add flour, baking powder and salt and again gently mix through until thoroughly incorporated.
Chop chocolate roughly and add to brownie mix
Spread brownie mix into prepared baking tin
Bake for 22 to 28 minutes, start testing with a toothpick at about 22 minutes. Remember every oven is different, the brownie took 26 minutes in mine
Squidgy and soft bellied and crisp on the outside, just the way a brownie is supposed to be
