On the Tenth day of Christmas, I made Ninja Bread Men

Hello Dear Reader,


Last Christmas, I was gifted a Ninja Bread set complete with gingerbread mix and Ninja cookie cutters. They are so super cute and have waited all year to use them. I used the actual gingerbread mix up long ago, making just plain round gingerbread biscuits with them. I am not a good decorator at all, but have done some very basic "Ninja" like decorating on them, using just icing sugar and a little lemon juice to make a very simple "pipe-able" icing.



The gingerbread itself is so amazing and have made them quite a few times before, as you can see the mixture makes quite a few and I had planned on making only a half quantity, that was until I added the whole amount of milk to the molasses so then I had to go ahead and add another half quantity of all the other ingredients. I must remember not to cook when you are hot and tired!



Ingredients for Ninjabread/Gingerbread men, clockwise from top right-
3/4 cup packed brown sugar, 3/4 teaspoon bicarb soda, 1 tablespoon cinnamon, 1 tablespoon ground ginger, 1/2 teaspoon ground cloves, 1/2 teaspoon salt, 2 tablespoons milk, 170 grams butter, 3/4 cup molasses and 3 cups plain flour
In the bowl of a stand mixer add the flour, spices, bicarb and brown sugar
Mix on low for about 30 seconds just to combine well
Now add the butter
And mix on medium low until the mixture looks sandy
In a small bowl mix together the molasses and the milk
Add this molasses mixture to the sandy looking mixture and mix until a dough comes together 
Working with half the amount of dough, at a time. Roll between two sheets of silicon baking paper and then put into the fridge to firm up a little. You don't want it rock hard, it just needs to be firm enough to handle
Cut out and bake at 180 C for about 8 to 9 minutes, but, as always keep an eye on them as every oven is different. Decorated how you like or keep them plain

This is just a bit of fun, really, but the gingerbread is seriously good!
