Easy Banana Bread, Take 3

Hello Dear Reader,

We are quite a foodie bunch at work and often talk about new recipes we have found or want to try, as a result of this I am always adding just one more recipe to my, already bulging, recipe folder. This is one such recipe that a lovely friend at work told me about a few weeks ago. The method for this Banana Bread is quite different and the unusual flavours of lemon and orange zest work amazingly well with the soft sweetness of banana. Give it a whirl, I know you'll love it.

Ingredients for East banana bread, Take 3, clockwise from top right-
40 grams butter, 2 teaspoon baking powder, 1 tablespoon brown sugar, 1 egg, 4 ripe bananas, zest of an orange and a lemon, 50 grams walnuts, roughly chopped, 110 grams white sugar and 225 grams plain flour

In the  bowl of a stand mixer, whisk the flour and baking powder together

Now add the soft butter and egg

And mix on lowish speed for about 1 minute until all ingredients have come together

Mash the bananas and chop the walnuts

Add the mashed bananas and the chopped walnuts to the bowl and mix on low until combined, don't over mix

Zest the orange and the lemon

Add to the bowl and again mix gently

Scrape and pour into a lined baking tin, sprinkle over brown sugar and bake in a 170C preheated oven for 40 minutes or until light golden brown and cooked through

Sorry, but I didn't get a photo of the baked Banana Bread, but was golden and delicious.

  1. Oh yummy! I've never seen a recipe that uses the orange and lemon zest, what an interesting combo, I'm trying this one for sure!
