Home Made Toasted Muesli

Hello Dear Reader,

I am always looking forward to my next meal but I especially look forward to Breakfast. During the week we start the day with Muesli, Fruit and Yoghurt. The Fruit bowl changes with the seasons but the Muesli stays the same. I have made this Muesli for years now and I never tire of it. The recipe is adapted from the Camp Eden Health Retreat cookbook.


4 cups rolled oats
1/3 cup each of Almonds, Walnuts and Macadamias
1/2 cup Honey


Line a large, shallow baking tray with Baking paper
Preheat oven to 150 C
Add all ingredients, except Honey to a large bowl, mix well
Now add Honey and again, mix well
Pour and scrape Muesli mix into lined, shallow baking tray
Put into preheated oven and cook for approximately 35 to 40 minutes, stirring often
Keep an eye on the muesli, it can catch and brown too quickly in places because of the honey, so stirring often is the key to getting an even golden brown colour
When you are happy with the colour of the Muesli take out and let cool completely
Store in an airtight container, preferably glass
Enjoy with milk of your choice or stirred into yoghurt or just eaten by the handful
