Valentine's Day Sweet Strawberry Pie Cake

Hello Dear Reader,

We don't normally do anything for Valentine's day, its way too commercial for my liking, however I will use any excuse for getting in the kitchen and whipping up something I haven't tried before. You know well, by now, that I love Mels Kitchen Cafe and this is just another lovely recipe by the amazing Mel. She called it a Fruit Pizza but I have renamed it Sweet Strawberry Pie Cake, as the base is not quite pastry and not quite cake.

Ingredients for Sweet Strawberry Pie Cake 

Cream butter and sugar in stand mixer 

Grate lemon zest on a microplane, half is for the dough and the other half is for the filling 

Add 1/2 of lemon zest, egg and vanilla and gently mix until combined 

In a separate bowl add flour, salt and cream of tartar 

Whisk to aerate 

Add flour mix to butter mix and gently combine 

Turn "dough" into a greased pie dish ( I think next time I will bake mine in a loose bottomed, fluted pie tin as it stuck a little to the pie dish) 

Press the "dough" into waiting pie dish 

Bake "dough" for 10 to 12 minutes or until light golden brown, then let cool completely 

Add block of cream cheese to stand mixer bowl and beat until creamy smooth 

This is what creamy smooth look like 

Add sugars, vanilla, other half of lemon zest and lemon juice 

Spread cream cheese mixture over cooled base and arrange strawberries on top. Do I get extra points for the love heart?

As you can see from the photo, the "dough" base was a bit of a disaster. It stuck rather badly, even though I gave the pie dish a really good spray. Never mind it still tasted delicious. Note to self, always use a loose bottomed pie tin!


125 grams butter
2/3 cup white sugar
1 large egg
1 teaspoon vanilla paste
Zest of one lemon, half for dough and half for filling
1 1/4 cups plain flour
1 teaspoon cream of tartar
1/2 teaspoon bicarb soda
1/4 teaspoon salt

1 packet cream cheese
2 tablespoons white sugar
1/2 cup icing sugar
1 teaspoon vanilla paste
1-2 tablespoons lemon juice
other half of lemon zest
fresh fruit to decorate, I used strawberries but what ever fruit you want to use

Preheat oven to 160 C. Spray a loose bottomed fluted pie dish/tin with rice bran spray

For the dough
Cream together the butter and sugar until smooth
Add the egg, vanilla and half of the lemon zest and gently mix until just combined
Add the dry ingredients and mix until just combined
Press into waiting pie dish/tin
Bake dough for 10 to 12 minutes until lightly golden, then cool completely

For the filling
In the same stand mixer bowl that you used for the dough (just wipe it out with some paper towel)
Beat cream cheese until creamy smooth
Add sugars, other half of lemon zest, vanilla and lemon juice and gently combine
Spread this cream cheese mixture over cooled base and decorate with fruit until your heart's content
