Banana and Blueberry Muffins
I love berries in all shapes, sizes and colours, and berries are very popular, now, because of their goodness. But in days gone by they were just good fruit that tasted amazing. I think if you googled the all time favourite muffin flavour, Blueberry, would be at the top. These muffins have all the amazing flavour of Blueberries along with some very good ingredient friends. Instead of a super sweet cake like muffin these little beauties actually taste and look healthy. I have, as always, tinkered with the original recipe found here, using Greek Yoghurt for extra body and coconut milk instead of dairy milk. Healthy enough for Breakfast and sturdy enough to pack in a lunch box. Enjoy!

80 grams butter
80 grams white sugar, 65 grams brown sugar and 60 grams Greek yoghurt (not pictured)
 Cream till light and fluffy, then add eggs, one at a time
In a food processor blitz 30 grams rolled oats
To the food processor, add Flours, Bicarb Soda and salt and blitz till combined
Add the dry ingredients to the butter mixture and mix till just combined. Add mashed bananas, vanilla and milk 
Again, mix till just combined, do not overmix
Roll frozen blueberries in 2 teaspoons of plain flour
Add "floured Blueberries" to muffin mix and gently combine 
3/4 fill muffin cases in muffin tin
Cook at 175 C for 20-22 mins until a toothpick inserted in the centre comes out clean.

Ingredients



80 grams butter 


60 grams Greek yoghurt

80 grams white sugar

65 grams brown sugar

2 large eggs

240 grams Wholemeal SR flour

30 grams Rolled oats

1/2 teaspoon Bicarb Soda

1/2 teaspoon salt

2 ripe bananas, mashed

1/3 cup milk of your choice

1 teaspoon vanilla extract or paste

1 cup frozen blueberries

2 teaspoons plain flour

Method

Preheat oven to 175 C. Line muffin tin with muffins cases

In the bowl of a stand mixer, beat together butter, yoghurt and sugars till light and fluffy

Add eggs and beat well

In a food processor, pulse Rolled oats till fine

Add the Wholemeal flour, Bicarb Soda and salt to the blitzed Rolled oats and pulse till combined

Pour dry mixture into wet mixture and combine

Add mashed bananas, vanilla and milk and gently combine

Toss the Blueberries in the plain flour and then gently fold into muffin mix

3/4 fill 12 muffin cases with muffin mix

Bake for 20 - 22 minutes or till a toothpick inserted in centre comes out clean

Let the muffins cool in tin for about 10 minutes then take out and put on a cooling rack

As you know, all ovens are unique and you get to know if your oven is "fast" or "slow", my oven is"fast" so I actually cook most muffins and cakes at 160 C. So please only use my suggested oven temperatures as a guide.
