Home Made Nut and Seed Crackers

Hello Dear Reader,

Have you ever thought of making savoury biscuits at home? It's super easy and so worth it. For hardly any time in the actual making stage, you are rewarded with super crunchy and super tasty savoury crackers ready for dipping or topping.

I cut mine into squarish rectangles before putting them into the oven or, once cooked, you can just break them into shards, for a rustic look. I used my Thermomix but any food processor would be up to the challenge.

Line two trays with baking paper and preheat oven to 160 C
Ingredient for the best nut and seed crackers, Almonds, Shredded Coconut, Chia Seeds, Water, Pepitas, Sunflower Seeds, Sesame Seeds, Flax Seeds, Oat Bran or Psyllium Husk, Salt, Pepper and Chilli Flakes
Add all dry ingredients to bowl
Add water and blitz on speed 6 for 10 seconds. You still want texture so don't blitz too long
Divide mixture onto the two lined trays
Spread over the entire tray, making sure it's even
If you want you can score it with a knife or pizza cutter
Cook at 160 C for 1 hour till golden and crunchy

Ingredients


50 grams almonds

50 grams shredded coconut

100 grams chia seeds
40 grams pepitas
100 grams sunflower seeds
30 grams sesame seeds 
30 grams flax seeds
2 tablespoons oat bran or psyllium husk
2 teaspoons salt
1/2 teaspoon chilli flakes (or more to your liking)
good grind of pepper
500 grams water

Method

Line two baking trays with baking paper and preheat oven to 160 C

Place all ingredient in Thermomix bowl and blitz for 10 seconds on speed 6

Let mixture sit for 10 to 20 minutes, during that time the mixture will thicken up and all the water will be absorbed. Hello chia seed and oat bran, these are the ingredients that do the thickening up

Divide mixture between the two lined trays and spread as thinly as possible. I just used a spatula

Put a tray in the oven at a time and cook for 1 hour on 160 C. As all ovens are different please keep an eye on your tray of goodness as some oven are hotter that others. 

Tip -  some of the inner biscuits didn't brown as evenly as the outer ones, so after taking them out of the oven, I snapped off the undercooked ones and popped them back into the oven until golden.
