The best home made Pineapple Cordial/Syrup

Hello Dear Reader,

This Pineapple cordial is so delightful and refreshing and it made from the bits of the pineapple that you would normally throw away! Absolutely nothing is wasted, the pineapple tops are planted out again for the next crop of Pineapples, the fruit is, of course, eaten and the skin and core is used to make this cordial. I had frozen the skins and core of the last two pineapples until I was ready to make this cordial. This whole process speaks to my frugal soul.

The last of this years Pineapples, so sweet 

Place Pineapple skin and core in a large saucepan 

Cover with water and bring to the boil, strain and add sugar and boil again until reduced 

Golden Pineapple Cordial


The leftover skin and core from 1 or 2 Pineapples
Enough water to cover the pineapple skins and core
2 to 3 cups of white sugar depending on how many pineapples you have and how sweet you like your cordial


Place Pineapple skin and core in a large saucepan and cover with cold water
Bring to the boil and turn heat down to low, let simmer for 2 hours
Strain Pineapple skins through a fine sieve and return liquid to saucepan
Now add the sugar and bring to the boil again while stirring to dissolve the sugar
Let it boil and reduce until you are happy with the flavour and sweetness
Let cool and then bottle
We have ours with lots of ice over soda water, so refreshing and delicious
You could also use this cordial as a syrup over icecream or poured over a plain sponge cake and served with whipped cream and toasted flaked almonds.
