This Pineapple cordial is so delightful and refreshing and it made from the bits of the pineapple that you would normally throw away! Absolutely nothing is wasted, the pineapple tops are planted out again for the next crop of Pineapples, the fruit is, of course, eaten and the skin and core is used to make this cordial. I had frozen the skins and core of the last two pineapples until I was ready to make this cordial. This whole process speaks to my frugal soul.

|Cover with water and bring to the boil, strain and add sugar and boil again until reduced|
