The Best Salmon Quiche Recipe

Hello Dear Reader,

I love all seafood and are lucky enough to have a wonderful fisherman for a hubby, but there is one fish we will buy and that is Salmon. I love Salmon anyway you could serve it and I love this Salmon Quiche so much, I could happily eat it everyday. It is a simple, one bowl, mix and cook recipe and it is made with no pastry crust so it is super light and no fuss. You can make it in a pie or Quiche dish or as I have done here little individual ones (I have used little silicon cupcake moulds) Served warm or cold, it is delicious. I try and source the Salmon from Tasmania.

Ingredients for Salmon Quiche 

To Poach Salmon-put Salmon in a small frying pan, add parsley stalks and lemon or lime slices and almost cover with cold water, cover frypan with a lid 

Cook on medium heat with lid on until it just comes to a simmer and has changed colour 

Now, turn over salmon fillet, turn off heat and replace lid. Let in rest for 10 minutes. The salmon fillet will now be cooked and easy to flake. Drain well and flake with a fork and set aside until needed 

While Salmon is cooking, in a medium bowl, add flour, salt and pepper and 2 of the eggs 

Whisk until smooth 

Add remaining 2 eggs, mustard and dill and again whisk until smooth 

Now whisk in milk 

Finely chop parsley and spring onions 

Take out Salmon and flake with a fork 

Add flaked Salmon, parsley and shallot and gently mix until just combined. Now gently stir in grated cheese 

Pour or spoon into a greased pie or Quiche dish or individual moulds 

Cook at 175 C for 35 to 40 mins for the individual Quiches or 45 to 50 mins for the big size

250 grams skinless Salmon fillet 
3 tablespoons plain flour
1 tablespoon finely chopped dill or equivalent out of a tube
Salt and Pepper
4 large eggs
1 tablespoon Dijon mustard
1 1/4 cups of milk (I make mine up from powdered as we don't drink milk)
2 spring onions, chopped finely
good handful of parsley, chopped finely
1/2 cup tasty cheese, grated

Preheat oven to 175 C and grease a pie or Quiche dish or individual moulds
Follow instructions above for poaching the Salmon fillet
In a medium bowl, whisk together flour, salt and pepper and 2 eggs until smooth
Add mustard and dill plus the last 2 eggs and whisk until smooth
Whisk in milk
Now add cooked and flaked Salmon, spring onions, parsley and grated cheese
Mix gently until combined
Gently pour or spoon into prepared pie or Quiche Dish and bake for 45 to 50 minutes for a large dish or 35 to 40 minutes for little individual ones

This is lovely served with a salad and lemon wedges and a little mayo
