Chocolate Toffee Caramel Sauce

Hello Dear Reader,

This deceptively simple chocolate sauce is amazing, you just have to make it, when you taste it you think "oh, its chocolate sauce, no wait, its toffee or is it caramel? at least that is what I think. We first had it last Sunday night for dessert over ice-cream and it was a hit! Then I made it to take to work, and had it over vanilla ice-cream, for a "goodbye" morning tea for some of our staff and everyone raved about it. It is such a great little recipe to have at hand, it makes you look like a super star.

Ingredients for Chocolate toffee caramel sauce 

Melt the butter and the sugar together in a small saucepan, on medium heat 

Bring it to a gentle boil and let it bubble away for 3 to 5 minutes 

Add cacao and mix well, then remove it from the heat 

Incorporated cacao 

Off the heat, add the cream and water and again mix well 

Return to heat until just bubbling again 

Let cool for a while, then pour over your favourite ice cream 


150 grams butter
250 grams raw sugar
2 heaped tablespoons cacao
3 tablespoons water
1/3 cup cream


Melt the butter and raw sugar together in a small saucepan over medium heat. Keep stirring for 5 minutes until it emulsifies into a bubbly, straw coloured foam
Stir in the cacao and remove from the heat, stir in the water and cream
Return to medium heat and stir until the sauce reaches a smooth and silky consistency
Cool sauce slightly for a few minutes. It will thicken on standing
Pour over ice-cream and enjoy the divinity of this chocolate-toffee-caramel sauce

If there are any leftovers store in the fridge and then zap it for 10 to 20 seconds in a microwave to make it a pourable consistency again 

This sauce is just fabulous and I think it would work as a sticky date pudding sauce, I would double it though and add some grated dark chocolate or cacao to the sponge of the pudding, to echo the chocolate flavour.
