Chicken and Chorizo Tray Bake

Hello Dear Reader,

I love the idea of bunging everything onto a tray and then whacking it in a preheated oven, add some steamed greens and dinner is done! This recipe ticks all the boxes, golden roast chicken, spicy chorizo, soft and sweet roasted red onions and roasted potatoes all infused with the favour of orange and oregano. I picked up the chicken from Coles on my way home on last Tuesday arvo, it was marked down dramatically, it cost $9.00 for 2 kg's of chicken pieces (wings, thighs and legs)

The evenings are very cold at the moment and this is perfect, easy, comfort food. Although in saying that it, I think it would equally be great in summer with tossed salads as well.

Ingredients for Chicken and Chorizo tray bake 

Put chicken into a big bowl, 1 tablespoon of oil, salt and pepper. Give it a good mix around to coat 

Grate zest of orange over chicken 

And again give it a good mix to coat 

Add chicken and chopped chorizo to baking tray 

Chop onion into chunks 

Chop potatoes into chunks also 

Chop up oregano 

Distribute all chopped ingredient, evenly, either between two smaller trays or one big one, drizzle over remaining tablespoon of oil and pop the trays into a preheated oven


Approximately 2 kg mixed chicken pieces, I used 4 chicken thighs, 4 legs and 4 wings 
4 Chorizo sausages (ALDI brand is more than fine) cut into 2 cm chunks
1 kg potatoes, cut into medium chunks
2 red onions, cut into chunks
zest of 1 orange
2 tablespoons finely chopped oregano
2 tablespoons oil (I use Rice bran oil for everything)
Salt and Pepper


Preheat oven to 200 C
Put chicken into a large bowl and drizzle with 1 tablespoon of oil, salt and pepper and the zest of the orange, mix well
Add chicken to an oven tray, lined with baking paper
Add chopped chorizo, potato, onion, oregano and then drizzle over remaining tablespoon of oil
Bake at 200 C for 1 1/2 hours, giving the trays a bit of a mix around occasionally so the chicken and potato brown evenly. Next time I make this, I will use one big tray so that I everything has its own space and will brown evenly.

We had a throw together dinner tonight, all from the bottom of the fridge, a few sausages few slices of bacon chopped up, some spicy chorizo chopped up, chopped onion garlic all browned off in the frying pan, dash of worscersauce, add some gravy added some home made baked beans served with new potaotes from the garden.

My favorite tray bake is very similar - chunks of potato and onions (or whole shallots) baked with some oil, salt & pepper then just before it is completely cooked I lay on top some pieces of salmon and add some lemon juice and some pine nuts, and cook for another 10 mins or so. Very easy and very tasty.

    I will bookmark your chicken dish - it will be just the thing in a couple of months when the evenings are cooler!
