Creamy Potato Bake with Garlic, Spring Onions and Cheese

Hello Dear Reader,

Who loves a good potato bake? I know I do, I could quite happily sit down to just a bowl of this divine potato bake for dinner, yep, I love carbs and to me the best carb is potato!

This is an easy potato bake, in that you par boil the potatoes first, dramatically cutting down the cooking time, then you just pop all the other ingredients into a jug, microwave for 2 minutes and pour over par boiled drained and dried potatoes, sprinkle over cheese and bung it in the oven and cook for 25 minutes at 180 C. And voila soft, fluffy and delicious Potato Bake.

Ingredients for Creamy Potato Bake with Spring Onions and Cheese 

Peel and cut potatoes into 2 cm dice 

Cover with cold water and bring to a gentle simmer, then turn heat down to low and let simmer away for about 10 minutes. You want soft pieces of potato but still holding their shape 

Grate garlic on a microplane and finely slice the spring onions 

In a jug combine the cream, garlic and shallots 

Give it a good stir 

Drain potato really well. I do this by first draining the potato in a colander and then returning potato to the pan, putting it back on the heat and gently agitation the pan to "steam" the potato 

Put the light, fluffy and dry potato in a low profile casserole dish 

In a microwave, heat combined cream mixture for 1 and a half to 2 minutes 

Pour warm cream mixture over potatoes and sprinkle with grated cheese 

Cook for 25 minutes in a preheated oven at 180 C


5 good size potatoes, peeled and chopped into 2 cm dice
1 and a half cups of cream
2 spring onions, finely chopped
1 large garlic clove, grated on a microplane
1/2 cup of cheese of your choice, I used a combination of regular tasty and parmesan
Salt and Pepper to taste


Preheat oven to 180 C
Put the potato into a large saucepan and cover with cold water, bring to a gentle simmer and turn heat to low and let simmer away for 10 minutes. You want soft potato that is still holding together
In a jug, add the cream, spring onions and garlic, microwave on high for 1 and a half to 2 minutes
Drain and dry potatoes and add them to a shallow casserole dish
Pour over warm cream mixture 
Sprinkle over grated cheese
Put into a preheated oven and cook for 25 minutes or until golden and bubbly

You can easily double the recipe for a larger crowd
