|Add wet ingredients-peanut butter, honey and coconut oil into the bowl of a stand mixer, mix on lowish speed for 2 minutes|
|To the bowl of a food processor, add the oats and coconut|
|Blitz until shredded finely|
|Add the blitzed oat, coconut and flax mixture to the wet ingredients in the stand mixer bowl. Break up chocolate into smaller pieces|
|Mix on lowish speed until thoroughly mixed and the chocolate has broken up further into small pieces throughout the mixture|
|Roll into small, even balls and put onto a lined baking tray. Put into the fridge to firm up. Store in a container in the fridge|
