Get Ahead Spaghetti Sauce in the Slow Cooker

Hello Dear Reader,

It was a long weekend this past weekend (thanks Queen Elizabeth) and I used the extra time to make this amazing spaghetti sauce. This sauce is so delicious and can be used so many ways, Spaghetti Bolognese of course, my Easy Lasagne, Potato Topped pie, piled on a baked potato with sour cream over the top or just on toast.

For very little time in the kitchen you are rewarded with a thick, flavourful and versatile sauce, that will become a favourite in your home. I used my slow cooker for this but it can easily be made on the cooktop, bubbling away on the lowest setting for about 3 hours, giving it a stir every now and then. This recipe is enough for 2 meals for 4 people.

Ingredients for Get Ahead Spaghetti Sauce, from bottom right-

225 grams field mushrooms sliced, a good handful each of basil, oregano and thyme, chopped finely, 4 to 5 garlic cloves, if they are big, use 4, grated on a microplane, 2 to 3 onions to yield 2 cups of chopped onions, 1 red capsicum diced, 340 grams of tomato paste, 4 x 400 gram cans of diced Italian tomatoes, 2 tablespoons brown sugar, 2 tablespoon balsamic vinegar, salt and pepper to taste, 1 kg of lean beef mince, 1 1/2 cups of beef stock (I use massel beef stock cubes) 

Chop onion finely and measure out 2 cups, grate the garlic on a microplane 

Add 1 tablespoon of oil to a heavy based non stick frypan and sauté, on medium heat, the onion and garlic, once onion is transparent, add onion and garlic to slow cooker bowl

Add mince to the frypan and break up and brown the mince.

Meanwhile, chop the red capsicum and mushrooms and add to the slow cooker bowl

Finely chop both the oregano and the basil and along with the thyme and the bay leaves add to the slow cooker bowl

Add cooked mince and all other ingredients to the bowl of the slow cooker

Give everything a really good stir and cook on low for up to 8 hours. You will need to remove the bay leaves and the "strings" from the thyme before serving. If you find the sauce is a little watery, remove lid from slow cooker and flick setting to high for about an hour to thicken up.

  1. I made a similar sauce and had meatballs with it for Sunday night's dinner. We made our fettucini too - sooo good!
