On the Eighth Day of Christmas, I made Cinnamon Sugared Almonds

Hello Dear Reader,

This is a wonderful recipe, really easy and something that you can be attending to while you are in the kitchen doing something else. To me, this is the perfect little morsel, nutty, crunchy, sweet but not too sweet and a nice kick of cinnamon with every mouthful. My best tip is to line your tray with silicone baking paper, as it not too much sticks to it, making your life so much easier, you don't want a sticky sugary mess to clean up at the end.

These make a fantastic Christmas present, for a foodie friend. These gorgeous sugary almonds are something you would buy in a high end store, that would charge you a fortune for a small jar. But they are super easy to make and just delicious. Watch them disappear!

I buy my almonds from ALDI, they are $9.99 for a 750 gram packet which works out to be $13.32 a kg and are always very good quality.

Ingredients for Cinnamon Sugared Almonds, clockwise from top right-
1/2 teaspoon vanilla essence, 1/4 teaspoon salt, 1 egg white, at room temperature, 2 cups almonds, 1/2 teaspoon cinnamon, 1/2 cup brown sugar plus 1 teaspoon cold water 

Line an oven tray with silicon baking paper and preheat oven to 120 C 

In a bowl, whisk the egg until stiff peaks form, add the cold water and the vanilla and then whisk again until stiff peaks form 

In a bowl measure out the brown sugar, salt and the cinnamon

And give it a good mix 

Add almonds to the stiff egg white mixture and gently mix to coat 

Now add the sugar mixture 

And gently but thoroughly mix to coat all almonds 

Pour and scrape onto the prepared tray and using a silicon scraper, spread out almonds into an even layer 

Bake at 15 minute increments until the sugary coating is no longer wet. Mine took 4 x 15 minute blocks, making it 1 hour 

When done, the sugary coating will not stick to your fingers and will be crispy
