Easy Asian Beef

Hello Dear Reader,

This is another really easy and quick meal from Mel over at Mels Kitchen Cafe. I love this beaut little recipe, as it is almost a one pot meal made with ingredients usually in the pantry. You can double or half the recipe as needed, I found this quantity perfect for 4 people plus 2 serves left over for a great weekend lunch for the boys. It is quite amazing how far 700 grams of beef mince will go when it is served with steamed rice and green veggie! I have adapted the recipe to suit our taste.

Ingredients for Easy Asian Beef, clockwise from top right-
1/2 cup light soy sauce, 2 teaspoons of chilli sauce, 1/4 cup beef stock (made from Massel stock cubes) 2 tablespoons of ginger, grated on a microplane, 3 cloves of garlic, grated on a microplane, 3 spring onions, 700 grams lean beef mince, 1 tablespoon sesame oil, salt and pepper to taste and 1/4 cup of brown sugar

In a jug, combine the soy and chilli sauce, beef stock, grated ginger and garlic, sesame oil and brown sugar

Sauté the finely chopped"white ends" of the spring onions (I know there is quite a lot of green in the pan, but you get what I mean)

Now add the mince and cook through, breaking up the clumps as you go

Chop the green ends of the spring onions a little chunkier

Pour sauce over cooked mince, give it a good stir, bring to the boil, turn heat down and let simmer for about 10 minutes. Scatter over green ends of spring onions

And serve with steamed rice and steamed greens
