This is another of those "Happy coincidence" recipes that I came upon by mistake, I wasn't actually looking for a recipe like this at all, but I am so glad I did. It takes hardly any time to put together and then the slow cooker weaves its magic. The beef is melting tender and the sauce is just sweet enough. It does make a quite a lot of sauce but thats okay, as the steamed rice you serve along side with soak it up, no problem. You could easy double the recipe to feed a larger crowd, this quantity easily feed 4 adults. It always amazes me how far you can stretch 500 grams of meat! I served an asian omelette with this as well.
Ingredients for Slow cooker Honey Sesame Beef, clockwise from top left-
For the sauce-2 tablespoon honey, 3 tablespoons soy sauce, 1 tablespoon rice wine vinegar, 2 tablespoons brown sugar, 1/2 to 1 teaspoon chilli flakes
500 grams beef cut into fine pieces, 1 red capsicum, sliced, 3 cloves garlic, grated on a microplane, 1 small brown onion, diced, 4 spring onion, chopped (keep aside some chopped, green part of the spring onion for garnish) and sesame seed to sprinkle over final dish
Put all the chopped, grated and sliced veggies in the bowl of a slow cooker
Mix all sauce ingredients together in a jug
Pour sauce over veggies and give it a good stir
Slice beef finely into about 2cm square-ish, thin pieces
Add beef to veggies and give it a good mix, cover and cook for 2-3 hours on high or 4-5 hours on low
About 30 minutes before serving, mix together 1/4 cup cold water and 1 tablespoon cornflour and add to slow cooker and stir. Cover and cook on high for another 30 minutes
Sprinkle with sesame seeds and reserved chopped green spring onion and serve with steamed rice
