Easy Beef and Lentil Chilli

Hello Dear Reader,

This is yet another recipe from Mel over at "Mels Kitchen Cafe" and it is a corker. It is really economical and delicious. If you have a crowd to feed, this will tick all the boxes, it is delicious, it makes plenty, healthy, very filling and great as a make and take dinner. Lentils and Pulses are a wonderful way to s-t-r-e-t-c-h a meal and they certainly do that with this recipe. Brown lentils don't cook down as much as red lentils do but I love the little soft nuggets of goodness throughout this dish, it adds texture and bulk in the most lovely way.

 Have I convinced you that you must make this one yet? Add into the equation the toppings, grated cheese, sour cream, chopped avocado, tomato (I used little home grown cherry tomatoes) coriander and a splash or two of chilli sauce and it takes the already "delicious" chilli into the "really delicious" category, it just ties all the flavours together and finishes this fabulous Chilli.

Ingredients for Beef and Lentil Chilli, clockwise from top left-
1/2 kilo lean beef mince, 1 1/2 cups brown lentils, picked over and rinsed, salt and pepper to taste, 4 cups chicken stock (I use Massel) 2 cans diced tomatoes, 1 teaspoon Cumin, 1 tablespoon brown sugar, 2 fat cloves of garlic, grated on a microplane, 1/2 a brown onion, finely diced, 1 teaspoon Oregano, 1 green capsicum, roughly diced and 1 tablespoon chilli flakes (or to taste) 

Sauté onion and garlic in a little oil 

Add mince and brown well, breaking up any lumps as you go

Now add all other ingredients, it may look too soupy at this stage,but the lentils absorb a lot of liquid

Give it a good stir

Bring to a gently simmer and pop a lid on

And cook away for 30 to 40 minutes, stirring occasionally, until reduced and thickened 

I served ours over Quinoa, with sour light cream, chopped avocado, finely chopped coriander, chopped tomatoes, some chilli sauce and grated cheese as the toppings

So easy and delicious and great for the whole family (if you omit the chilli flakes, I think it would be very child friendly)

  1. This looks good Fiona. I made your beef and potato lasagne on Friday, the kids loved it. I think I needed to cook the beef part longer to make it thicker next time, but it was very nice and easy! 😁
