What we bought, spent and ate this week

Hello Dear Reader,

I had a little switch-a-roo, meal wise this week, with having left overs from both this week and last week. I L-O-V-E left overs big time. You know that feeling, about 3 O'Clock in the afternoon, when you realise there is left overs for dinner and that smile that comes across your face and that wonderful feeling you experience of not having to cook dinner that night, oh how I love it!

Anyway, that happened twice this week, go me! So we didn't use the 500 grams of beef mince we bought for this week BUT we did use up the Smoked Salmon from Easter week. That left the fridge a little less cluttered by yesterday.

I have to get into the pantry over the weekend and give it a really good tidy up, so don't be surprise if you see a before and an after (like this one) this week some time. I do have a fair idea of what is in there but as Lovely Hubby does the grocery shopping, the grocery photo's and the putting (shoving) away, I sometimes lose track of what we have in there. So a stocktake of the pantry is in order.

What we ate
Friday-Beans on Toast, easy, delicious and good for you. These are the Heinz Mexican Beans

Saturday-We had some lovely friends over for lunch and we served Retro Tiger Prawns and Seafood Sauce AND


 This Frittata plus a beaut salad, we were all so full from this big lunch we just had some leftovers that evening

Sunday and Tuesday-Veggie Shepherds Pie and steamed Broccolini

Monday-Pan Fried Wahoo with this Warm Lemon and Parsley Potato salad and steamed broccolini

Wednesday-Prawn Stir Fry, we are having this almost weekly lately. Lovely Hubby and Son caught these prawns, they are medium bay prawns, on the small side but very sweet

Thursday-Smoked Salmon Pasta with Asparagus

  1. On Monday we had Nacho Pie, which is actually a Julie Goodwin recipe, it went down a treat, the kids loved it!
    Tuesday, homemade beef and beer pie, absolutely delicious, but a true labour of love to make.
    Wednesday, Falafel with tahini yoghurt, made by my daughter, except I fried them for her.
    Thursday, Green curry chicken with rice and green beans.
    Friday, fired up the wood fired Pizza, and had the neighbours over for pizza!
    Saturday (tonight) hubby and I are going to see Jimmy Barnes in concert, so yesterday I made a double batch of Mumma's Spaghetti, half for dinner for the babysitters and the kids, and half for the freezer for another day when I'm too tired to cook!
    Sunday, heaps of leftovers to get through, mostly from the pizza night, so likely we will make more pizza, cooked in the regular oven.

  2. The seafood your boys catch must be so lovely and fresh, Fi. Looks delicious! We ate very simply this week. I made pumpkin soup from last of a pumpkin I had. Also a very simple soy and plum jam stir-fry to use up lots of veggies I had in crisper. Meg:)

      I love the sound of the soy and plum jam stir fry, just delicious. I will be using the last of a magnificent pumpkin in a Chicken Curry this week, what would we do without the humble pumpkin? Fi

  3. Good morning Fiona,
    This year I decided that we would eat less meat and more vegetable based meals. I plan the menu for the week based on 1 chicken, 1 beef, 1 lamb, 2 fish and 2 vegetarian dinners.
    This week's menu has featured 2 of your recipes.
    Mon -Salmon Fillets, Green Salad & Warm Lemon and Parsley Potato Salad. (Our favourite potato salad. Leftovers of this are used for her work lunch by my daughter who adds a hard boiled egg.)
    Tues -Grilled Lamb Loin chops, Rocket & Baby Spinach Salad and Italian Green Bean Salad.
    Wed -Pasta with Braised Zucchini. Tossed Salad and Garlic & Herb Bread.
    Thurs -Rissoles in Mushroom Gravy, Mashed Potato, Sauteed Zucchini and Roasted Pumpkin (home grown).
    Fri -Satay Chicken Skewers, Steamed Rice and Mixed Lettuce Salad.
    Sat (Tonight) -Vegetarian Pies & Roasted Veggies.
    Sun - Homemade Pizzas (Veggie Lovers for my daughter & me. Meat Lovers for the carnivorous son and husband.)
