Mexican Sweet Potato Wraps

Did you watch the TV show "Eat Well for Less"? I was told about this show by a lovely reader and as it had already screened, I downloaded "9 NOW" on my iPad and watched all the available archived shows. I found it quite interesting, but I did think that a few of the families "bunged" it on a bit. I mean who just buys a whole frozen duck, just because they saw it and wanted it? And really if you wanted and needed to save money, like one family did, why would you continue to buy expensive meat and craft beer?

Anyway, I did quite enjoy it, a bit of voyeurism, looking into what people put in their shopping trolley's and what they eat and unfortunately, what they waste. One gem of a recipe I took away with me was a roasted sweet potato wrap with black beans and spinach by Ben O'Donoghue. I just happened to have some sweet potatoes that needed using up and a can of black beans in the cupboard. It is a really delicious dinner with lots of interesting flavours, it is quite robust and filling so it's very good for the meat-a-saurus in the family.  

I had 9 small sweet potatoes (1 kg) but large ones will work just as well, any size really, you will just need to adjust the roasting time, you want the sweet potatoes really well roasted so they are super soft and sweet. I found 2 of these smaller sweet potato halves were the perfect size for 1 wrap.

For the Sweet Potatoes you will need 1 teaspoon each of ground cumin and smoked paprika mixed into a paste with about 2 tablespoons oil (I use rice bran oil for everything)

Scrub and half the sweet potatoes length ways and brush with spice oil, bake till soft and golden, my small ones took 40 minutes at 180C

The other ingredients are, clockwise from top, 1 1/2 cups of grated cheese, 300 grams baby spinach leaves, a good handful of coriander, roughly chopped, 2 onions, finely chopped and a can of black beans, drained and rinsed

Sauté onion until transparent

Now add the black beans and toss to warm though

Meanwhile top roasted sweet potatoes with grated cheese 

And pop back into the oven for the cheese to melt

Just before serving, add the spinach to the onion and black bean mixture and let it wilt

Warm the wraps through 

To assemble-add sweet potato to the top centre of the wrap and smash with a fork, top with the  spinach, black bean and onion mixture and finish with chilli sauce and sour cream, wrap and devour 

We all enjoyed this easy, delicious and healthy dinner and there was some leftovers which I have enjoyed for my lunches this week, SWEET!

  1. I agree with you Fiona, Eat Well For Less was a bit over the top, but apparently the "drama of extremism" makes for good TV viewing. But I took away a few ideas from the show, the main one being that I'm a bit of a brand snob, and I have started shopping more at Aldi, and trying cheaper brands, as a result my grocery bill has decreased a bit, although I still buy Australian as much as possible.

    What I liked seeing was a show about frugality on mainstream TV, it gives me hope that there may be more like it, I devour anything to do with homemaking, simple living and frugality.
