Way Good, Whey Pancakes

Todays little recipe came about because I had an abundance of whey left over from making Paneer cheese for this mushroom curry  that I'm making today. Did you know that one litre of milk will yield only 150 gram of Paneer cheese but 3 cups of wonderful whey? And as you must know by now I hate waste of any sort, you bet I used that whey up!

These low line pancakes are just perfect, they are light but have some great body at the same time, they are just sweet enough and are quite filling because of the extra protein from the whey plus the eggs. We topped ours with berries, greek yoghurt and maple syrup and had them for a lazy Sunday breakfast. This quantity made heaps so I have frozen the rest down to take with us camping, they will be perfect with butter and jam for morning tea on the beach.

I've made mine in my Thermomix but can easily be made without, just add the wet ingredients to the dry and mix well.

Ingredients for Whey Pancakes, clockwise from top, 2 cups plain flour, 1 teaspoon bicarb soda, 1/2 teaspoon salt, 2 eggs at room temperature, 2 cups of whey, 2 tablespoons of maple syrup and 3 tablespoons oil of choice (I used rice bran oil) 

Add the flour, bicarb and salt to the TM bowl and blitz for 3 seconds/speed 5 

Now add the whey, eggs, maple syrup and oil 

And blitz for 10 seconds/speed 5, scrape down sides and blitz again for 5 seconds/speed 5. Let batter rest for 20 minutes or so

Cook in the usual way

  1. Morning tea at the beach with homemade pancakes - it doesn't get any better! We are off to the beach for a walk with dogs and family today too.
