What we bought, spent and ate this week

 Hello Dear Reader,

I have been doing a lot of prepping for our upcoming camping trip in exactly 11 days time, we will be picking up our caravan in 7 days from Jawa at Caboolture and we have slowly and steadily been buying some lovely new things to go in the new caravan. Things like a new set of sheets and quilt cover, new cutlery (Aldi) and melamine plates and bowls (Kmart) and some suction cup holders and storage baskets (Bunnings)

We have gone through all of our old camping gear and donated lots to a local tackle shop that has a little side business next door to it. They accept donations of any unwanted fishing and camping gear and sells it off very reasonably to people just starting out their fishing or camping journey. It's a win, win situation. 

Now on with the food of last week-

Thursday-Oven baked sausages with mashed potato, upmarket mushy peas and roasted sweet potato

Monday-Turmeric Pearl Perch with salad and chips 

Tuesday-BLT's on these Panini's, a nice quick dinner as we both had dental appointments and didn't get home till after 5.30pm.

    On our menu this past week:

    -Chicken and Vegetable Soup with fresh sourdough bread

    -Vegetarian Stir Fry with Udon Noodles

    -Beef Massaman Curry with Roti Bread & Steamed Rice

    -Grilled Salmon with Tomato, Red Onion & Cucumber Salad and my mum's Italian Potato Salad

    -Fusilli with Beef Ragu (I made a big batch of the ragu and froze six portions)

    I made your Panini Rolls on the weekend and the family loved them. We had them fresh for lunch and I froze the rest. They have been used for work and uni lunches this week. I will make a double recipe this weekend as they were lovely and so handy to have in the freezer.

    My son likes them filled with crumbed chicken, mayonnaise & lettuce or meatballs, pasta sauce and mozzarella. My daughter's favourite filling is grilled vegies with rocket and aioli.

    How is your garden going? Have you planted your winter vegies yet?

    I have sown seeds of our favourite winter vegies:
    -Tuscan Kale, Curly Kale, Endive, Radish, Beetroot, Rainbow Chard, Silverbeet and five varieties of lettuce.

    Still to be sown or planted:
    -Carrots, Spring Onions, Salad Onions, Pak Choy, Rocket and Spinach

    Did you find that your butternut pumpkins were more productive than the jap pumpkins you grew last year?

    We have three decent sized jap pumpkins from a vine that came up in our compost. Do you have any hints on how to tell when they are ready to harvest?

    I'm looking forward to a future 'What's Happening In My Garden' post.

    1. Hello Maria,
      Your menu sounds so delicious, can I ask what cut of beef you use for the ragu?
      Our garden is at a stand still as we are waiting patiently for the pumpkins to ripen, the bit that attaches pumpkin to the vine needs to dry, hard and browned off, that is when the pumpkin is ready to be picked. If you take them off before this happens, the pumpkins will be sappy and pale. I have picked one JAP pumpkin and 2 butternuts but haven't eaten them yet as I let them season for a few weeks before we eat them. I will definitely be growing butternuts again as the vines aren't as big and they seem more prolific than the JAP variety.
      Once all the pumpkins have been picked and the vines cleared we need to fill up the garden beds with new soil as the original soil has shrunk down so much, so we may not have the chance to grow very much this next growing season. That's life in the garden though hey? I wish I had more time to devote to the garden but until I work less hours that won't be happening. Hope all is well in your world.
